7 -Layer Mexican Ziti

20170106_160407Apparently the threat of three inches of snow today sent my mom into a cooking frenzy.  I figured she would make her famous multi-layer baked ziti, but I was wrong. This afternoon she decided to take a hiatus from her Italian/Sicilian roots and head south of the border.  She put a twist on her 3-cheese baked ziti and made a 7-Layer Mexican Ziti. Y’all, this recipe is crazy good! I’m talking slap your grandma good! It is seven layers of cheesy goodness, and I bet you have all the ingredients to make it at home! My mom didn’t have a recipe, she rarely does – she loves just making things up as she goes and it always tastes delicious.


  • Refried beans
  • One jar of salsa
  • Guacamole
  • Jalapeños
  • 1.2 lbs. of ground beef
  • Cheddar cheese
  • Sour cream
  • Diced tomatoes
  • Black olives

I was not specific when it came to how much you will need of each ingredient, but that’s because you can make it your own. Add however much you want and just have fun with it! After you have added all your ingredients, pop it into the oven for 30 minutes at 375 degrees. Don’t forget to get your tortilla chips to dip into your Seven-Layer Mexican Ziti.
